Momma can we bake?

Jealous much?

You might be.

I didn’t see the scratch on her arm till just now. Bad momma. 50 flogs with wet noodle.

Please note the missing teeth, we are VERY proud of them.  Baby girl stay little for a little longer.Momma’s heart can’t take the growing up thing too much more.

I was dumped for the girl next door.

Half of the clean up crew. This is my sweet, old lady Molly. She is still jealous Hoover had a centerfold layout before her, the whippersnapper.

These are Coconut Butterscotch Chip Cookies.


I doubled the recipe and the jar is looking low already. You could add Chocolate Chips instead of Butterscotch, which oh my would be sinful.

People, I need a good camera, that is all there is to it. There are so many wonderful shots that I want to take and it isn’t happening with my old beater.

Back to this, a not so good  shot of a good cookie.Soft yet chewy. Not too sweet.

Pamela is  a baker. As in a professional cake, cookie, pie oh my, baker. My photos are making her cringe, I can feel it from here. Sorry.  She replied to my request with the information that her designated eaters rated this “the best cookie they ever ate”. See you would have baked it too. Ironic no? that Order says “wifh is da best wookee I aver ate”.  The clean up crew is always glad when a child eats standing up, food in hand.  Somehow seems to raise the possibility of crumbs to the next level. The clean up crew is awfully busy this afternoon.

Recipe follows. Tiny confession, I substituted half the butter with coconut oil and only had “raw organic unsweetened coconut”. And yet, “wifh is a pweety darn good wookie”.  Enjoy.

The Coconut Butterscotch Chip Cookie

from  The William- Sonoma Baking Book via Pie in the Sky

Cream together:

1/2 cup softened butter

1/2 cup brown sugar

1/2 cup white sugar


1 egg

1/2 teaspoon vanilla

Stir in:

1 1/3 cups all-purpose flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt


1 3/4 cups sweetened shredded coconut

1 1/2 cups butterscotch chips

Roll into one inch balls and bake at 325 degrees for 12-15 minutes until edges are browned.

Consume alone with coffee and hide cookie jar. (I added that part)

    Yippee Yahoo! for coconut oil and organic coconut!! Made them even better I’m sure!
